Grown in Illbu Kebele in Ethiopia’s Gomma Woreda, this coffee comes from producer Abdo Aba Mecha, who manages a 30-hectare estate at elevations between 1,900–2,100 meters above sea level. Abdo’s commitment to quality is evident in his meticulous washed processing methods, built around careful cherry selection and slow, controlled drying on raised beds.

For washed processing, only the ripest cherries are selected and hand-pulped in the evening. After washing the next morning, the coffee is shielded from direct sunlight on pre-drying tables before being transferred to raised beds, where it dries for approximately 14 days to reach ideal moisture stability.

After milling, the coffee is decaffeinated using the sugarcane ethyl acetate (EA) method, which removes caffeine while maintaining the coffee’s natural sweetness and structure.
